TUCKER TIME // savoury galette

Julia Busuttil Nishimura (website here) is an Australian cook and author based in Melbourne. She has published three cookbooks and I have made many of her culinary creations which are always easy and tasty.

This galette (recipe here) is so versatile and these flavour combinations are delicious. But I didn’t have the ingredients this time and I wanted to use what I already had on hand. So I made my own filling using one of Julia’s variation suggestions of zucchini with ricotta.

The base is a mix of ricotta, grated parmesan cheese, olive oil, minced garlic, salt and pepper. Then I topped it with zucchini slices, chopped basil and a drizzle of olive oil with more garlic. There’s endless ways to make savoury or sweet options and who doesn’t love pastry?
